Stewed hare with mushrooms
Here is a delicious recipe for hare with mushrooms. Make sure to adapt the quantities according to the number of guests.
Ingredients :
- 1 hare, cut into pieces
- 200 g of mushrooms of your choice (button mushrooms, chanterelles, porcini mushrooms, etc.)
- 2 onions, chopped
- 3 cloves of garlic, minced
- 2 carrots, cut into slices
- 2 stalks of celery, diced
- 200 ml of red wine
- 500 ml of chicken stock
- 2 tablespoons of tomato paste
- 2 bay leaves
- Fresh thyme
- Salt and black pepper, to taste
- Olive oil
Instructions :
- Season the hare pieces with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat.
- Brown the pieces of hare on all sides. Remove them from the casserole and set aside.
- In the same pot, add a little more oil if necessary, then fry the onions and garlic until golden.
- Add the carrots, celery, and mushrooms to the casserole dish. Saute them for a few minutes until they start to soften.
- Pour the red wine into the casserole dish to deglaze the bottom. Make sure to scrape up any meat juices stuck to the bottom of the casserole dish.
- Add the tomato paste, chicken stock, bay leaf and thyme. Return the pieces of hare to the casserole dish.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 2 to 3 hours, or until the meat is tender.
- Adjust the seasoning with salt and pepper to your preference.
Serve the hare with mushrooms with potatoes, fresh pasta or rice to accompany.
