Moose on wood fire

Ingredients :
- 1.5 kg moose steak (shoulder, thigh, etc.)
- Marinade:
- 1/2 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup honey
- 3 cloves of garlic, minced
- 1 tablespoon of Dijon mustard
- Juice of a lemon
- Salt and black pepper, to taste
- Twigs of thyme or rosemary for the wood fire
Instructions :
- Mix all the marinade ingredients in a bowl. Reserve a small amount of marinade for basting while cooking.
- Place the moose steaks in a baking dish and pour the marinade over the meat. Make sure the meat is well coated. Cover the dish with cling film and leave to marinate in the refrigerator for at least 4 hours or overnight.
- Prepare a wood fire and let the flames turn into embers. Arrange sprigs of thyme or rosemary over the coals to add flavor to the smoke.
- Remove the steaks from the marinade and drain excess liquid.
- Place the moose steaks on the wood fire grill. Cook for about 10-15 minutes on each side, depending on the thickness of the meat and your cooking preference.
- Brush the meat with the reserved marinade while cooking to give it extra flavor.
- Check for doneness by lightly cutting the meat to ensure it is cooked to your preference.
