Trout soup
Here is a trout recipe perfect for cold winter days. Great way to share a moment after a great day outside!
Ingredients :
- 500 g fresh trout, cleaned and cut into pieces
- 1 onion, finely chopped
- 2 carrots, peeled and cut into slices
- 2 stalks of celery, diced
- 2 potatoes, peeled and cut into cubes
- 2 garlic cloves, minced
- 1 leek, cleaned and sliced
- 1 liter of fish stock
- 1 cup dry white wine
- 1 cup heavy cream
- 2 tablespoons of butter
- Salt and pepper, to taste
- Fresh herbs (parsley, chives) for garnish
Instructions :
- In a large saucepan, melt the butter over medium heat. Add the onion, garlic, leek, carrots and celery. Sauté the vegetables for a few minutes until tender.
- Add the trout pieces to the pan and fry briefly to seal the flesh.
- Pour the white wine into the pan and let it simmer for a few minutes to reduce slightly.
- Add the fish stock to the pan and bring everything to a boil. Then reduce the heat, cover the pan and simmer for about 15-20 minutes, until the vegetables are tender and the trout is cooked through.
- Add the potatoes to the pan and continue to cook until tender.
- Reduce the heat and stir in the heavy cream. Season with salt and pepper to taste.
- Let the soup simmer for a few more minutes to warm the cream.
Serve the soup hot, garnished with chopped fresh herbs. You can also add toasted bread croutons for more texture.
