Trout soup

Soupe à la truite

Here is a trout recipe perfect for cold winter days. Great way to share a moment after a great day outside!


Ingredients :  

  • 500 g fresh trout, cleaned and cut into pieces
  • 1 onion, finely chopped
  • 2 carrots, peeled and cut into slices
  • 2 stalks of celery, diced
  • 2 potatoes, peeled and cut into cubes
  • 2 garlic cloves, minced
  • 1 leek, cleaned and sliced
  • 1 liter of fish stock
  • 1 cup dry white wine
  • 1 cup heavy cream
  • 2 tablespoons of butter
  • Salt and pepper, to taste
  • Fresh herbs (parsley, chives) for garnish

Instructions :

  1. In a large saucepan, melt the butter over medium heat. Add the onion, garlic, leek, carrots and celery. Sauté the vegetables for a few minutes until tender.
  2. Add the trout pieces to the pan and fry briefly to seal the flesh.
  3. Pour the white wine into the pan and let it simmer for a few minutes to reduce slightly.
  4. Add the fish stock to the pan and bring everything to a boil. Then reduce the heat, cover the pan and simmer for about 15-20 minutes, until the vegetables are tender and the trout is cooked through.
  5. Add the potatoes to the pan and continue to cook until tender.
  6. Reduce the heat and stir in the heavy cream. Season with salt and pepper to taste.
  7. Let the soup simmer for a few more minutes to warm the cream.


Serve the soup hot, garnished with chopped fresh herbs. You can also add toasted bread croutons for more texture.
